How Decaffeination Actually Works

There are two fundamentally different approaches, and the difference isn't just chemistry trivia.

Solvent-Based

Direct & Indirect Solvent Methods

Uses a chemical solvent — typically methylene chloride or ethyl acetate — either applied directly to the beans or used to strip caffeine from a water extract, which is then returned to the beans.

Chemical-Free

Swiss Water Process / CO2 Method

Uses only water, temperature, and carbon filtration (Swiss Water), or pressurised carbon dioxide (CO2 method) — no added chemical solvent touches the beans at any stage.

Methylene chloride is classified as a probable human carcinogen, and the US EPA has recently banned it for most uses. It remains permitted in coffee decaffeination at strictly regulated trace limits, but the ban has fuelled genuine public debate — including proposals in California to restrict decaf coffee made using this method entirely. If you'd rather avoid the question altogether, look for "Swiss Water Process" or "CO2 processed" on the label — both are chemical-free by design.
